ALEF RECIPES - STUFFED MUSHROOMS

INGREDIENTS

20 - MUSHROOMS, FRESH
Remove caps

2 CLOVES - GARLIC
Peel and mince

1/4 - ONION, FRESH, SMALL
Finely chop

1/4 CUP - BELL PEPPER, GREEN
Chop

2 CANS - MINCED CLAMS, 6.5OZ
Drain

1/4 CUP - CLAM JUICE
Use from cans

1/2 CUP MOZZARELLA CHEESE
Shred

1/4 CUP - PARMESIAN CHEESE
Grate

3/4 CUP - DRY BREADCRUMBS, ITALIAN STYLE

TO TASTE - BLACK PEPPER
Grind

8 SLICES - BACON
Break up

1-1/2 STICKS - BUTTER
Melt


DIRECTIONS

Preheat oven to 350 degrees Farenheit (176 degrees Centigrade/Celsius)
Lightly grease a 9x13-inch baking dish
Arrange mushrooms upside down in dish

In a medium bowl
mix Clams, Garlic, Parmesian cheese, Onion, Breadcrumbs, Bell Pepper, Black Pepper, half the Mozzarella Cheese, and Clam Juice
Stir in half of melted butter
Fill mushroom with heaping amounts of mixture
Sprinkle with remaining Mozzarella Cheese
Drizzle all with remaining butter

Bake 30 min in preheated oven, or until lightly browned
